TEA CAKE

I've been making this cake for a long time, I remember copying it out of my mum's cookbook when I was getting ready to leave home, get married and move interstate!   With so few ingredients and knowing that I'd be cooking for myself I thought it would be a winner - especially when on a very tight budget.......

4 simple ingredients -

250g Cold Tea (I just did a very strong cup of tea with a tea bag and hot water) 
200g Sugar
170g Currants 
320g SR Flour

Put all ingredients in bowl and mix on speed 5 for 20 seconds - REVERSE or until all combined

Pour into lined tin and bake on 180 degrees for 25-30 minutes or until cooked through

BEST EATEN FRESH OUT OF THE OVEN WITH LOTS OF BUTTER :-)
